WINEMAKING
Sourced from our Valley Floor vineyard just South of Tanunda, the Shiraz was harvested in the cool of night. Then destemmed before carrying out fermentation in 4 tonne open top fermenters. The wine was pumped over twice a day for a period of 7 days. It was then matured in matured in new French oak for 10 months. The racked off into older French oak barrels for a further 2 years. The wine has had minimal filtration and fining prior to bottling.
TASTING NOTES
Deep red in colour. Lifted blackberry, mulberry and spiced plum define the rich complex nose. The palate shows powerful black fruits, pepper and savoury supporting oak. A wine with great balance and density, the finish is long with mouth filling tannins.
