An above average wet spring and cooler than average summer temperatures led to a later start to picking than normal. This combined with a long and mild ripening period meant that our fruit developed to a beautiful level of maturity on the vine. This has led to outstanding flavours and perfumed, expressive wines.

WINEMAKING
Fermentation of the three varieties occurred separately in 4 tonne open top fermenters. Each batch had a fermentation period of 7 days with hand pump overs performed twice daily to extract colour, tannin & flavour. The Shiraz had a proportion of whole bunch in the fermenter to add texture and flavour to the final wine. The three batches were then individually pressed off and left to mature in second and third use French oak barrels for a period of 18 months prior to blending. The wine has had minimal fining and filtration prior to bottling.
TASTING NOTES
Vivid red in colour. A complex nose with notes of red cherry, musk and hints of cigar box. The mid weighted palate is bright with generous blackberry and five-spice. All supported by hints of French oak, leading to a long finish with savoury silky tannins.
